Whether you’re a beginner or a professional baker, our Rosca de Reyes Masterclass will elevate your pan dulce skills!
Rooted in Spanish tradition, rosca de reyes is one of Mexico’s most festive and culturally layered sweet breads. In this hands-on class, Chef Alex guides you through crafting this buttery, orange-zested brioche-style dough from scratch, adorning it with sugar paste and candied fruits that represent the jewels of a royal crown, making this a stunning edible centerpiece for any holiday celebration. Students will prepare both traditional roscas as well as filled variations featuring almond paste and chocolate chips, offering a playful twist on the classic celebration bread. While the roscas are rising, the class will also prepare coricos de maíz, an iconic corn polvorón known for its crisp texture and deep roots in Mexican baking traditions. True to tradition, a baby figurine is hidden inside every rosca, with the lucky finder tasked with hosting a celebration for family and friends. Whether you’re new to pan dulce or looking to deepen your craft, you’ll leave with the skills, the story behind this beloved bread, and beautiful roscas to share
