Whether you’re a beginner or a professional baker, our Concha & Bizcocho Masterclass will elevate your pan dulce skills. In this hands-on experience, you’ll learn to master the rich, enriched bizcocho dough behind iconic favorites like conchas, chilindrinas, volcanes, nubes, and cuernos.
Chef Alex breaks down the science behind perfect pan dulce at the ingredient level, from how fat enriches the dough and sugar affects fermentation, to achieving proper gluten development and that signature soft texture through proofing. You’ll master dough temperature control, proofing techniques, and learn to troubleshoot common issues like dense crumb, weak structure, or over-fermentation.
