🗓️ Day 1: Dough + Lamination Fundamentals
Learn how to mix and prepare yeasted laminated dough
Master the butter block: shaping, temperature control, and folding techniques
Complete initial folds and rest periods
Discussion: gluten development, lamination science, and common pitfalls
Dough rests overnight in preparation for Day 2

Roll, cut, and shape traditional croissants
Assemble and braid apple strip Danishes with a spiced fruit filling
